Icicles

I should ask for help more often-- there were a ton of great ideas for Bryn to sleep well posted under comments. Tonight I gave her a choice of dreaming about making a dessert or flying on a magic carpet ride. I also appreciate your prayers-- they help too.

I had a good first day back, but today was a rainy, cold day. Kind of gloomy. The Yikes had fun pulling off icicles and eating them though.

Bryn asked me yesterday what she should do with a bag. I asked her what was in it. She looked in it, looked up at me, then stuck her whole head in it and her muffled voice answered my question with, "my head." She cracks me up.

You did such a good job with ideas for Bryn's dreams that I thought I try another one-- easy to make dinners that kids will eat.

Eating icicles! Love it! Very few things make ya feel like a little kid again than eating icicles!

Thanks for sharing that sweet story about Bryn. What a wonderful mental image that is!

Continued prayers for restful nights for all of you. Hope y'all stay warm. That Snow Kingdom may turn out to be non-fiction if it keeps on raining like this.

Impossibly Easy Cheeseburger Pie:
1lb lean ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded cheddar cheese (4 oz)
1/2 cup original bisquick mix
1 cup milk
2 large eggs

1. Heat oven to 400F. Spray 9 inch glass pie plate with cooking spray.
2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate
4. Bake about 25 minutes or until knife inserted in center comes out clean.

That's straight out of the betty crocker cookbook. When you brown the meat you'll probably want to add a little something to it besides the salt to give it better flavor. I don't know how kids feel about it but I'll eat it and I have the taste buds of a 1st grader...

ooh, i love cheeseburger pie, it is delicious, but very greasy.

spaghetti
chicken spaghetti
chicken and yellow rice
chicken parmesian (or alfredo)
baked chicken and macaroni
mashed potatoes
pancakes

there are others, and you probably want recipes for these -- i'll get them to you tomorrow.

A good cold weather one-frito pie. canned chili fritos cheese, what could be easier? Tacos, loaded baked potaoes. You can add bagged salad to any meal, my kids love it most of the time, thats one thing to remember-just because they dont like something this week does not mean they wont like it next week.

Go to www.kraftfoods.com. Tons of easy recipes there. You can look them up based on your preferences. I can also email you a bunch of easy recipes. I will try to have that to you by the end of the week.

I have 3 kids, 11 and 6 year old twins. We have baked potatoes probably every other week. You can put them in the oven before you leave for school and just have the timer set. I cook mine for a couple of hours. Have the oven come on at 4 and by 6 your taters are done! I'll get you some recipes emailed though.

Jake --- you are so wise to be asking for advice...Jess must be smiling. One of our kids favorites was anything on a baked potato. I recently tried wrapping a potato very tightly with plastic wrap on a roll and placing it in the microwave. Cook on high about 6-7 minutes. If you have several potatoes it will take longer. Cut the potatoes in half and mash them a bit in their shells. Then I would put on hamburger that I had browned and some grated cheese. Return briefly to the broiler to melt the cheese. The potatoes could also be cooked in the oven; poke with a fork and bake at 350 for about a hour...that is if you have time, otherwise the microwave is a fast trick. Hugs, Lynne

Make your own personal pizzas. You can get whatever meats you like, and cut up fresh veggies, pizza sauce and cheese. You can get the small personal ready made crusts or the larger crusts. Bake them @350 until all the cheese is melted. My kids have fun making their own pizzas.

My son's favorite meal is the easiest (if it's not easy I don't make it). Got it from a Wood Elementary friend!
Brown 4 chicken breasts on the stove for a few minutes on each side. Sprinkle them with Mrs. Dash and place them in the middle of a glass baking dish (9X13). On one side of the chicken put 1 or 2 cans of drained green beans and on the other side put 3 or 4 cubed red potatos. Melt 1 stick of butter and mix it up with Good Seasons Italtian mix (find it with the salad dressing in a little package like gravy). Pour the mixture over everything in the dish. Cover with foil and bake 350 for about 1 hour. It is so delicious! My 4 year old eats nothing but gobbles this up.
Jake, I continue to admire the way you are juggling everything. Asking for suggestions is a great way you are allowing others to minister to you (and you thought we were helping you - really it's just the opposite). You amaze me!

Lord, I pray tonight that Bryn can lie down without fear and enjoy pleasant dreams. Remind her that she need not be afraid for You, Lord, are her security. Prov 3:24-25

I also pray that Bryn will lie down in peace and sleep tonight, knowing that You alone, O Lord, will keep her safe. Ps 4:8

Thank you for your faithfulness, Lord.

Spaghetti and meatballs:
Combine ground beef with an egg and shredded parmesan cheese. Form into meatballs and microwave for 10 minutes in a baking dish. Add to your favorite jar sauce and finish heating on the stove.

For pizza, I use the Boboli crust and Muir Glen organic sauce in a can. Add cheese and toppings, and you're done!

homemade chicken strips:
cut chicken into strips, dip into beaten egg and then into flour and parmesan cheese mixture. Bake at 400 on release foil-lined cookie sheet for 20-30 minutes. Add some rolls and steamed veggies and you're done!

do you have a crockpot? that thing saves our dinner over and over! you can google "crockpot recipes" and find lots but one of our favorites is basic roast with potatoes and carrots.

put in roast (even frozen is okay)
add box of chicken stock or some water
add baby carrots
add washed new potatoes
turn on low and come home 8 hours later to a yummy dinner!

I'm slow to check, but this is my favorite easy meal:
You will need a muffin tin, a package of Pillsbury biscuits, a can of chili, and some shredded cheese.
Pull the biscuits apart and shove each one into a muffin hole (what are those things called?) Push em down so they make a little cup. Kindergartners and first graders are said to have the very best fingers for doing this. Spoon chili into each "cup" and then sprinkle cheese over each. Bake in the oven for as long as the biscuit package says to.

ok this has gotten a little over used at our house so much so that my husband has resorted to tearing recieps out of magazines and giving them to me. LOL. I marinate chicken and beef in wishbone Italian salad dressing and bake it. We have either rice or pasta (wacky mac being the most popular followed by tortolini) and fresh fruit and or green salad.
